Vermouth Aperitif

You can enjoy vermouth straight or on the rocks (often with a slice of orange or lemon). In Spain they will often add a dash of sifón, Spain’s version of club soda, which can help open up the aromatic flavours of the wine. I really enjoy it with Fever Tree Elderflower tonic. Vermouth is a great aperitif, and the Spanish people believe that a glass before a big meal can help prepare your appetite and aid in digestion. Historically, vermouth was the classic drink to have after (or before entering!) mass on Sunday.

Ingredients

Serves 1

  • 40 ml Cinzano Rosso or any good quality Spanish vermouth
  • 200 ml Fever Tree elderflower tonic water
  • Ice
