Onion Pakora

Ingredients

Serves 6-8

1 cup gram (chickpea) flour

3 red onions, sliced thinly

1 green chilli, sliced thinly

1 tsp cumin seed

10 curry leaves

½ cup water

1 tbs coconut oil

1 tsp salt

Place the onion, chilli, curry leaves and salt into a bowl. Add coconut oil and mix thoroughly. Then add gram flour and now you will need to get your hands in there and scrunch all the ingredients together. Add water a little at a time until you have a batter consistency. Leave for around 30 minutes to absorb the water. Add coconut oil to a wok or frypan to about 1cm. Meanwhile make small patties with the onion mixture and cook until browned. You will need to turn over the pakoras at least three times. Cooking time approx. 5 minutes.

Serve with some cucumber raita or your favourite chutney.

These make a great crunchy snack served with a cold beer, or as a side dish with a curry
