Try grinding your own spices and your kitchen will be filled with the aromas of an Indian spice market
- ¼ cup fennel seeds
- 30 cloves
- 30 peppercorns
- 6 cinnamon sticks (1 inch)
- 1 star anise
- 50 cardamom
- 1 nutmeg
Dry roast all the ingredients until they become fragrant and very slightly browned. Once cool put them in a coffee grinder and grind until you have a fine powder. Store in an airtight container for up to two months
