GIGI’S SIMPLE CHICKEN CURRY

YOU WILL NEED

6 chicken thighs
2 red onions sliced
1 green chilli thinly sliced
10 curry leaves
2 tomatoes thinly sliced
¼ tsp garam masala*
½ tsp turmeric
1 tsp chilli powder
1 cup water
1 tsp salt
1 heaped tbsp coconut oil
100 ml coconut milk (optional)

Melt coconut oil, then add onion, chilli, tomatoes and curry leaves and sauté on a low heat until soft. Then add dry spices and cook for 2-3 minutes. Add water then chicken and cook on high for 10 minutes or until chicken is cooked through and the sauce thickened.

My husband doesn’t like too much spice so I often add coconut milk. You can also add vegetables such as sweet potato, spinach/kale, green beans or cauliflower (whatever you have in your fridge)

*garam masala is a mix of spices roasted and then ground in a mortar and pestle or a coffee grinder – you can buy a garam masala mix at your local supermarket, but it’s even more fun to make your own with whole spices which you can buy at most supermarkets or try your local Indian grocer. I love going to my local Indian market, they are always interested in what I’m cooking this week and have lots of tips for improving my recipes!
